For the dough: mix warm water with yeast in a bowl, let it sit for 10 minutes.
In a bowl, mix flour with salt, sugar, add the Huevo San Juan® one by one, add the hydrated yeast, knead until combined.
Add the butter, gradually pour in the milk while kneading, until a soft and smooth dough forms. Let it rest until it doubles in size.
For the frosting: in a bowl, whip the egg whites until they change color, gradually add the powdered sugar until fully integrated.
Separate the frosting into three bowls, add red food coloring to one bowl, and green food coloring to another. Set aside.
Roll out the dough on a floured surface to about 5mm thick, using a round cutter, cut circles 8 cm in diameter, then use a smaller cutter to cut a circle in the center. Let it ferment on a tray for 15 minutes.
Heat oil in a saucepan over medium heat, using a spatula, place the donuts in the oil, fry the donuts for 3 minutes on one side, flip, and fry for another 3 minutes on the other side until golden. Let cool.
Dip half of each donut into the frosting of each color, let excess drip off, place on a rack; let dry.
Enjoy with a glass of cold milk.
