Dulce de Leche Empanadas

Empanadas are a preparation consisting of a dough filled with some stew or ingredient; they can be sweet or savory.   • 2 1/2 cups flour, for the dough
  • 180 grams butter, for the dough
  • 2 tablespoons sugar, for the dough
  • 1/4 cups yogurt, for the dough
  • 2 tablespoons milk, for the dough
  • 1 teaspoon vanilla essence, for the dough
  • 1 tablespoon cinnamon, for the dough
  • 1 teaspoon baking powder, for the dough
  • 1 cup dulce de leche, for the filling
  • 1 egg yolk, for the filling
  • 1 tablespoon vanilla flavored cornstarch, for the filling
  • 3/4 cups walnuts, finely chopped, for the filling
  • 1 egg, for brushing

  • In a bowl, mix the flour, butter, sugar, yogurt, milk, vanilla extract, cinnamon, and knead until you have a homogeneous consistency. Let it rest in a bowl covered with plastic wrap for 30 minutes.
  • For the filling, mix the dulce de leche with the egg yolk, cornstarch, and walnuts. Set aside.
  • On a floured surface, roll out the dough to a thickness of 3 mm, using a 10 cm diameter cutter to cut circles, fill with dulce de leche, and seal with a fork.
  • Place the empanadas on a baking sheet, brush with egg, and bake for 20 minutes at 180°C.
  • Serve with coffee.
