  • 1/2 cups whipping cream, warm, for truffle
  • 1/4 cups chocolate, melted
  • 1/2 cups dulce de leche, for truffle
  • 180 grams butter, melted
  • 1 1/2 cups dulce de leche
  • 3 egg yolks
  • 50 grams sugar
  • 1 teaspoon baking powder
  • 2 cups wheat flour, sifted
  • 3 egg whites
  • 2 tablespoons vanilla essence
  • 1 tablespoon butter
  • 1 tablespoon flour

  • Preheat the oven to 180 °C.
  • In a bowl, mix the heavy cream, chocolate, and dulce de leche, freeze until solid.
  • In a bowl, combine the melted butter with the dulce de leche, stir well until you get a homogeneous mixture. Set aside.
  • In a bowl, beat the egg yolks with the sugar until they double in volume, gradually add the previous mixture in a thin stream and set aside.
  • Gradually add the flour with the baking powder until you incorporate all the flour into the mixture, set aside.
  • Beat the egg whites until they double in volume and form peaks. Gently fold in the egg whites and vanilla essence into the yolk mixture.
  • Grease the mold with butter and dust with flour. Fill halfway, add the truffle, and cover the mold with the remaining filling. Bake for 18 minutes.
  • Serve on a plate with cheese ice cream, las glorias, and cajeta. Enjoy.
