Easter Bunny Cake

Prepare this fun vanilla cake filled with colorful balls for this Easter, topped with chocolate frosting and surrounded by bunnies. Fill your holidays with magic with this amazing cake.

  • 2 1/4 cups cow's milk, for buttermilk
  • 6 tablespoons lime juice, for buttermilk
  • 4 1/2 sticks butter
  • 2 1/4 cups sugar
  • 6 eggs
  • 3 egg whites
  • 2 teaspoons vanilla essence
  • 6 cups flour
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoons salt

  • 200 grams cream cheese, for the cake balls, divided into 4 parts
  • 190 grams cream cheese, for frosting at room temperature
  • 115 grams butter, for frosting at room temperature
  • 3 cups icing sugar, for frosting
  • 1/2 cups cocoa powder, for frosting
  • chocolate bunnies, for decoration
  • chocolate egg, colored, for decoration

  • Preheat the oven to 180°C.
  • For the buttermilk, mix the milk with the lemon juice and let it sit for 10 minutes.
  • For the cake, in a bowl, beat the butter with the sugar until well combined, add the eggs one by one, the egg whites, and the vanilla extract.
  • Gradually add the flour, baking powder, baking soda, salt, buttermilk, and beat until you have a homogeneous mixture.
  • Place a ladle of cake mixture in 4 bowls and add food coloring to paint each one a different color. Reserve the remaining mixture.
  • Pour the colored mixtures into 4 small molds and bake for 25 minutes. Let cool and unmold.
  • Crumble the colored cakes and mix with the cream cheese, using your hands, form balls and set aside.
  • Pour ¼ of the uncolored cake mixture into a 23 cm diameter mold, add the colored balls in between, and cover with another ¼ until the balls are covered. Repeat in another mold.
  • Bake the cakes for 40 minutes or until a toothpick inserted comes out clean. Cool and unmold.
  • For the chocolate frosting, beat the cream cheese with the butter, using a sieve, add the powdered sugar and cocoa.
  • Spread some frosting on a cake, place the other cake on top, and cover with the remaining chocolate frosting.
  • Place the chocolate bunnies around the cake, cover the surface with the colored chocolate eggs, and decorate with the ribbon.
  • Cut and enjoy with a glass of cold milk.
