Easy Angel Cake

  • 25 grams flour
  • 1 gram salt
  • 300 grams San Juan® egg whites, at room temperature
  • 1 tablespoon cream of tartar
  • 250 grams sugar
  • 10 milliliters vanilla essence
  • red fruit compote

  • Preheat the oven to 175°C
  • Beat the San Juan egg whites on medium-high speed in the mixer until foamy.
  • Add the cream of tartar and continue beating until soft peaks form.
  • Continue beating and adding sugar until a French meringue forms (soft peak stage).
  • Incorporate the vanilla while continuing to beat.
  • Sift the flour and salt, using a rubber spatula, and gently fold in the flour.
  • Pour the mixture into a bundt pan (preferably removable) without greasing if your mold is Teflon or silicone.
  • Bake the cake at 175°C for approximately 35/40 minutes.
  • Remove from the oven and let cool before unmolding.
