Easy Carrot Cake with Walnut

  • 2 cups carrot, peeled and grated
  • 4 eggs
  • 160 grams almond flour
  • 100 grams whole-wheat flour
  • 2 tablespoons yeast
  • 2 tablespoons Inés® extra virgin sesame oil, presentation of 250 ml
  • 1/4 cups plain Greek yogurt
  • 1/4 cups walnuts, finely chopped
  • 1/4 cups walnuts, finely chopped
  • 1/4 cups macadamia nut
  • 1 tablespoon cinnamon powder
  • 1/2 tablespoons ginger powder
  • 1/2 tablespoons nutmeg
  • 1 pinch ground cloves
  • 4 tablespoons monk fruit
  • 2 cups plain Greek yogurt, for the topping
  • 1/4 cups white chocolate, melted, for the topping
  • 2 teaspoons monk fruit
  • walnuts, finely chopped, for decoration

  • Beat the eggs in a bowl for 5 minutes or until they increase in size a little, then gradually add the almond flour, whole wheat flour, and baking powder. Mix very well with a spatula or whisk until fully combined.
  • Mix the Inés® extra virgin sesame oil, Greek yogurt, walnut, English walnut, macadamia nut, and carrot with a spatula. Add the cinnamon, ginger, walnut, clove, and monk fruit, then mix for 2 more minutes or until everything is fully combined.
  • Pour the mixture into a previously greased and floured baking dish, then bake at 180 °C for 35 minutes.
  • Remove the carrot cake with walnut from the oven and let it cool for 1 hour.
  • Mix the yogurt, white chocolate, and monk fruit in a bowl with a whisk, then completely cover the carrot cake with this mixture and smooth with a spatula. Decorate with chopped walnut, then refrigerate for one more hour, cut into medium squares, and enjoy.
