Almond and Amaranth Cookies

Prepare these delicious almond and amaranth cookies; they are a great healthy snack option for kids' lunches or for those who want to eat healthier.

  • 1 1/3 cups almond flour
  • 1/2 cups amaranth
  • 45 grams unsalted butter
  • 1 egg
  • 2 tablespoons brown sugar
  • 1/2 teaspoons baking soda
  • 1/2 teaspoons baking powder

  • Preheat the oven to 180ºC.
  • Beat butter with sugar until creamy.
  • Add the egg and continue beating.
  • When well mixed, gradually add the almond flour.
  • Add the baking soda and baking powder.
  • Finally, add the amaranth.
  • On a baking sheet, place parchment paper; the use of aluminum foil is not recommended as they could burn too much on the bottom. Make small mounds with a spoon, not too close together as they may spread a little.
