Avocado and Coffee Cookies

Dessert is always received with joy; however, it is often the least healthy part of our diet. To counteract this situation, these cookies aim to incorporate ingredients with health benefits such as avocado, coffee, honey, whole wheat flour, and oats. Additionally, it is a vegan recipe.

  • 1 avocado
  • 1 ripe banana
  • 5 tablespoons honey
  • 30 milliliters espresso coffee
  • 200 grams flour, (extra flour for dusting)
  • 30 grams cocoa
  • 1/2 teaspoons baking powder
  • 30 grams oats
  • strawberries
  • 1 pinch coarse salt

  • Preheat the oven to 180°C.
  • Mash the avocado pulp to make a puree, cut the banana into medium cubes.
  • In a bowl, mix all the ingredients, starting with the wet ones and then the dry ones.
  • Form a compact dough and refrigerate for 30 minutes.
  • Grease and flour a baking tray.
  • Cut the strawberries into quarters.
  • On the tray, place a tablespoon of the dough (leaving space between them).
  • Place a piece of strawberry and some grains of salt on top of each cookie.
  • Bake for 35 minutes or until the cookies are golden.
