Blueberry and Yogurt Cookies

Delicious blueberry and yogurt cookies, make them as a tasty snack for your kids!!

  • 2 cups flour
  • 1 1/2 tablespoons dry yeast
  • 1/2 tablespoons baking powder
  • 1/4 tablespoons salt
  • 1 1/4 cups granulated sugar
  • 1 1/4 cups Greek yogurt
  • 1 egg, slightly beaten
  • 1 lime zest
  • 1 tablespoon lime juice, fresh
  • 1/2 tablespoons vanilla essence
  • 1 1/4 cups blueberries, fresh
  • 1/2 cups icing sugar

  • Preheat the oven to 375ºF.
  • In a large bowl, combine the flour, yeast, baking powder, and salt, stir and set aside.
  • In another bowl, stir together the sugar, yogurt, egg, lemon zest, lemon juice, and vanilla. Stir until a smooth mixture forms. Add to the mixture from the other bowl and mix until there are no lumps, then fold in the blueberries.
  • Grease two baking sheets with butter and place the dough in flattened balls with approximately 3 centimeters of space between each, sprinkle each with a little powdered sugar.
  • Bake them for about 12 minutes. Transfer the cookies to another plate to cool before serving.
