  • 1 cup butter
  • 3/4 cups sugar
  • 2 eggs
  • 2 teaspoons vanilla essence
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoons salt
  • 1/2 tablespoons nutmeg
  • 1/2 teaspoons ground ginger
  • 2 cups oats
  • 1 1/2 cups carrot, grated
  • 2 sticks butter, for the filling
  • 340 grams cream cheese, for the filling
  • 6 cups icing sugar, for the filling
  • 2 teaspoons vanilla essence, for the filling

  • For the cookie: Beat the butter with both sugars until well combined.
  • Add the eggs one by one and the vanilla.
  • Sift the flour, baking powder, baking soda, salt, nutmeg, and ground ginger.
  • Gradually add the dry ingredients to the mixer.
  • Add the oats and grated carrots.
  • Cover and let rest for 4 hours in the refrigerator.
  • Preheat the oven to 180°C.
  • Form small balls with the dough of the same size and place them on a baking tray lined with a silicone mat or parchment paper. Bake at 180°C for 11-13 minutes.
  • Remove from the oven and let cool completely.
  • For the filling, beat the cream cheese together with the butter.
  • Add the sifted powdered sugar and vanilla.
  • Spread some of the filling on the half of the cookies and then place another cookie on top.
