Caramel Cookies

You will love these delicious cookies; they have a fantastic filling that you can mix, making them excellent for gifting wrapped like a caramel.

  • 100 grams butter
  • 3/4 cups sugar
  • 1 egg
  • 1 tablespoon vanilla essence
  • 1 3/4 cups flour
  • 1/2 teaspoons baking soda
  • 1/4 teaspoons salt
  • 1/2 tablespoons red food coloring
  • 30 grams butter, for the frosting
  • 90 grams cream cheese
  • 1 cup icing sugar
  • 1 tablespoon cow's milk
  • 1/2 teaspoons vanilla essence

  • Cream the butter and add the sugar until it is slightly fluffy and light in color.
  • Add the egg and vanilla until well combined.
  • Combine the sifted flour, baking soda, and salt gradually into the butter mixture.
  • Divide the dough into equal parts. One part will be colored with red dye. It is recommended to refrigerate the dough to achieve the right texture.
  • Roll out the dough into a rectangle and stack it on top of itself. The width will depend on the pieces and size you desire.
  • Roll the dough and cut slices of 2cm.
  • Place them on a baking sheet with a little space between them because they will spread.
  • Bake in the oven at 180ºC for 10 minutes or until the cookie starts to brown around the edges.
  • Make the frosting by creaming the cream cheese with the butter until there are no lumps. Incorporate the powdered sugar, milk, and vanilla extract.
