Easy Whole Grain Cookies

  • 1/2 cups Oléico® safflower oil
  • 1 cup flour
  • 1/2 teaspoons baking powder
  • 1/8 teaspoons salt
  • 1 1/2 cups oats
  • 1/3 cups sugar
  • 1/2 cups brown sugar
  • 1 egg
  • 2 teaspoons vanilla essence
  • 1/4 cups chocolate chips
  • 1/2 cups unsalted almonds, chopped

  • Preheat the oven to 180° C. Place a silicone mat on a baking sheet.
  • Combine the flour, baking powder, salt, and oats in a bowl.
  • In another bowl, beat the oil, sugar, egg, and vanilla for 2 minutes on medium speed, stop the mixer once the mixture thickens and changes color.
  • With the mixer on low speed, add the flour mixture to the egg mixture, then add the chocolate chips and almonds.
  • Using a spoon, form 5-centimeter balls on the silicone mat, ensuring each cookie is spaced 5 centimeters apart. Flatten them with a fork.
  • Bake for 13 to 15 minutes. Remove them from the mat and allow them to cool on a rack.
