Prepare these delicious and original hot chocolate cookies. They are very easy to make and have a firm texture on the outside but soft on the inside, covered with a chocolate ganache and topped with a melted marshmallow. Don't miss out on trying them.
Place the chocolate and butter in a microwave-safe bowl and heat until melted.
Combine the flour, cocoa, baking powder, and salt.
In a mixing bowl, beat the eggs with the sugar and vanilla.
Add the melted chocolate mixture to the mixer, blend, and while mixing, gradually add the flour mixture.
Cover the dough and refrigerate for 1 hour. Form equal-sized balls with the mixture and place them on a baking sheet lined with parchment paper. Bake at 170°C for 10 - 12 minutes.
Cut the marshmallows in half, and once the cookies are baked, remove them from the oven and place a half of a marshmallow in the center of each one.
Return the cookies to the oven for 2-3 minutes. Remove them from the oven and let them cool for 10 minutes.
For the frosting: Combine all the ingredients and pour some frosting over the cookies. Decorate with colored sprinkles.
