Chocolate Meringue Cookies

  • 1/2 cups San Juan® egg whites
  • 3/4 cups sugar
  • 1/2 cups cocoa powder
  • rainbow sprinkles

  • Beat the Egg Whites San Juan until reaching the turrón point (the egg whites will adopt a thicker texture and form peaks).
  • Gradually incorporate the sugar. Continue beating.
  • Repeat the previous step with the chocolate. Once the meringue has a uniform color, stop beating.
  • Place the mixture in a piping bag; we recommend using a ½ centimeter star tip.
  • Cut a sheet of wax paper about 40 cm long, and draw circles 5 centimeters wide on it, leaving space between them. Flip the paper so that the ink does not come into contact with the meringue. Place the wax paper in a baking dish.
  • Dust the wax paper with flour. Using a piping bag, fill the circles with meringue, starting from the edges towards the center.
  • Add a few strawberry chips to each meringue cookie.
  • Preheat the oven to 100 degrees Celsius, bake your meringues for one and a half hours. It is necessary to let them cool for one hour.
