Ginger Cookies with White Chocolate

  • 2 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoons salt
  • 2 teaspoons ginger powder
  • 1 teaspoon cinnamon powder
  • 1/4 teaspoons nutmeg
  • 1/4 teaspoons clove powder
  • 3/4 cups butter, at room temperature
  • 1/2 cups granulated sugar
  • 3 tablespoons granulated sugar
  • 1/2 tablespoons raw sugar
  • 1 egg
  • 1/4 cups molasses
  • 2 teaspoons vanilla essence
  • 3 cups white chocolate
  • 3 tablespoons vegetable shortening

  • Preheat the oven to 180°C.
  • Combine the flour, baking powder, salt, spices, and salt.
  • Cream the butter together with ½ cup of refined sugar and brown sugar.
  • Add the egg, molasses, and vanilla.
  • Add the dry ingredients and beat until everything is well incorporated.
  • Cover the cookie dough with parchment paper and refrigerate for 1 hour.
  • Shape balls from the dough of the same size and flatten them slightly.
  • Sprinkle the remaining 3 tablespoons of sugar over the cookies.
  • Bake at 180°C for 8-10 minutes.
  • Melt the white chocolate in the microwave and add the vegetable shortening.
  • Remove the cookies from the oven and let them cool completely.
  • Once the cookies are cool, dip half of each cookie in the white chocolate.
  • Melt the green and red chocolate and decorate the cookies.
