It's ideal for the holiday season; both kids and adults love them. Go ahead and make them with family or friends. They are soft on the inside and slightly crunchy on the outside. They are perfect to accompany with a cup of coffee or tea.
In a pot, put the sugar, water, molasses (honey or maple syrup if you don't have molasses), ginger, cinnamon, cocoa powder (not the sweetened one), and ground nutmeg. Place the pot on the stove over medium heat and let the ingredients combine completely. Stir constantly to prevent the sugars from caramelizing.
Remove the saucepan from the heat and add the room temperature butter. Beat with the help of a whisk or a spatula and let it cool to room temperature.
Mix the flour with the baking powder, salt, and baking soda.
When our mixture is completely cooled, place it in a mixing bowl and prepare the mixer with the dough hooks, gradually incorporating the dry ingredient mixture.
You can do it by hand with a spatula; it is not necessary to use the mixer.
If necessary, finish kneading by hand. Cover the dough with plastic wrap and refrigerate it for at least two hours. I recommend leaving it overnight, so it will be firm enough to roll out and cut with cookie cutters.
Take the dough out of the refrigerator and preheat the oven to 180°C.
Cut the dough into portions and roll it out with a rolling pin. If your dough is cold enough, it won't be necessary to use flour to roll it out.
If it sticks a bit to the rolling pin or the table, you can add a little flour or place the dough between two sheets of wax paper and roll it out; this way your dough won't dry out.
Cut the dough using cookie cutters. Place the shapes a little apart from each other on a baking tray lined with parchment paper.
Bake at 180°C for 10 minutes. They won't be very golden, but that is enough time for them to be soft and cooked.
Remove them from the oven and let them cool completely. You can decorate them with royal icing or eat them plain.
