Ingredients: 200 grams sugar; 100 milliliters water; 135 grams molasses; 200 grams unsalted butter; 1 teaspoon cinnamon; 1 teaspoon ginger powder; 1 teaspoon cocoa powder; 1 pinch nutmeg; 1 pinch salt; 1 teaspoon baking soda; 550 grams wheat flour

In a pot, put the sugar, water, molasses (honey or maple syrup if you don't have molasses), ginger, cinnamon, cocoa powder (not the sweetened one), and ground nutmeg. Place the pot on the stove over medium heat and let the ingredients combine completely. Stir constantly to prevent the sugars from caramelizing. Remove the saucepan from the heat and add the room temperature butter. Beat with the help of a whisk or a spatula and let it cool to room temperature.
