Gingerbread Cookies with Yogurt

Gingerbread cookies are a classic dessert in American cuisine. They are delicious cookies in the shape of little people with a rich ginger flavor. Here we present a delightful version with Oikos® Walnut Yogurt, perfect for the holiday season.

  • 260 grams flour
  • 100 grams butter
  • 50 grams yogurt, Oikos® with Walnut
  • 100 grams brown sugar
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon powder
  • 1 teaspoon ginger powder
  • 1 egg
  • 1 pinch salt
  • 2 egg whites, (for decoration)
  • 200 grams icing sugar, (for decoration)
  • 1 lime, (for decoration)
  • food coloring, for decoration

  • Preheat an oven to 180° C.
  • In a bowl, mix the brown sugar, flour (previously sifted), baking soda, cinnamon, ginger, and a pinch of salt. Beat and add an egg to the mixture. Then, add the butter (at room temperature) and continue mixing until all the ingredients are incorporated and you obtain a homogeneous mixture.
  • Sprinkle a little flour on the surface where you will work the dough. Roll out the dough with a rolling pin (1 centimeter thick), and cut out the cookies with a gingerbread man cookie cutter. Place the cookies on a tray with a silicone mat or wax paper.
  • Bake for 8 to 10 minutes, or until fully cooked. Allow them to cool before decorating.
  • For decoration: add egg whites to a bowl, stir and gradually incorporate the powdered sugar. Add a few drops of lemon juice. Divide the mixture into several bowls (depending on how many colors you want to use to decorate the cookies) and color each bowl's mixture with a different food coloring. Pour each color into a piping bag and attach a small round tip. Decorate the cookies.
