Coffee Powdered Cookies by Victor

The other day we had a gathering with some good friends, and we had to bring a dessert, so I thought of making coffee powdered cookies accompanied by a good cup of coffee; we enjoyed them very much.

  • 200 grams butter
  • coffees, in grain
  • 75 grams sugar
  • 3 egg yolks
  • 20 grams ground coffee
  • 100 grams wheat flour
  • 350 grams cornstarch
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder

  • Beat the butter with the sugar, add the egg yolks one by one, and beat. Add the coffee until you have a soft dough, sift the flours and powders, place the dough in plastic wrap, and refrigerate for 15 minutes to be able to roll it out. Preheat the oven to 180ºC.
  • On the work surface, place plastic wrap, the dough, and on top, place more plastic wrap to roll it out without sticking to the rolling pin; once rolled out, cut into round shapes and place on a tray to bake for 15-18 minutes.
