The other day we had a gathering with some good friends, and we had to bring a dessert, so I thought of making coffee powdered cookies accompanied by a good cup of coffee; we enjoyed them very much.
Beat the butter with the sugar, add the egg yolks one by one, and beat. Add the coffee until you have a soft dough, sift the flours and powders, place the dough in plastic wrap, and refrigerate for 15 minutes to be able to roll it out. Preheat the oven to 180ºC.
On the work surface, place plastic wrap, the dough, and on top, place more plastic wrap to roll it out without sticking to the rolling pin; once rolled out, cut into round shapes and place on a tray to bake for 15-18 minutes.
