Add all the ingredients to a food processor and blend until a smooth dough forms. Refrigerate for 30 mins.
With the cold dough, form balls of approximately 40 g. On a baking sheet, place a plastic cooking mat. On it, place the dough balls and flatten them with a glass. It is important to dip the glass in sugar beforehand to prevent the cookie from sticking. You can cut them into heart shapes if you prefer.
Bake the cookies at 170°C until they are cooked but not too browned.
Dip in lemon glaze and you're done!
