Coyotas

  • 1 kilo flour
  • 15 grams dry yeast
  • 400 grams lard
  • 1/2 cups sugar
  • dulce de leche
  • egg yolk
  • sugar

  • Mix the flour, yeast, sugar, and lard until all ingredients are well combined. Let it rest for 30 minutes.
  • Roll out the dough on a flat surface with a little flour, cut circles, add a bit of dulce de leche in the center, and close with another circle. Press the edge of the coyota with a fork, place on a baking sheet, and freeze for 15 minutes.
  • Brush the coyotas with egg yolks and sprinkle with sugar. Bake the cookies at 180 °C for 20 minutes.
