Cover the dough with plastic wrap and refrigerate for 30 minutes or until firm.
Roll out the cookie dough on a flat surface and use cutters to shape the cookies.
Place the cookies on a baking sheet and make sure to leave about 3 cm of space between each one.
Bake the diabetic cookies at 170 °C for 15 minutes. Remove from heat and let cool.
