Diabetic Cookies

Try these delicious diabetic cookies, they are full of flavor and very healthy. Plus, they are very easy to prepare, and you won't feel guilty eating them. You can also bake them with your kids as a low-sugar cookie option.

  • 125 grams butter, soft
  • 2 tablespoons artificial sweetener
  • 1 teaspoon cinnamon powder
  • 1 teaspoon vanilla essence
  • 160 grams flaxseed flour
  • 75 grams wheat bran
  • 1 egg
  • bittersweet chocolate, sugar-free, melted

  • Lightly beat the butter together with the sugar substitute and ground cinnamon, then add the vanilla, flaxseed meal, and bran. Mix, add the egg, and finish incorporating.
  • Cover the dough with plastic wrap and refrigerate for 30 minutes or until firm.
  • Roll out the cookie dough on a flat surface and use cutters to shape the cookies.
  • Place the cookies on a baking sheet and make sure to leave about 3 cm of space between each one.
  • Bake the diabetic cookies at 170 °C for 15 minutes. Remove from heat and let cool.
  • Once cooled, decorate the cookies with melted dark chocolate.
