Easy Lemon Cookies

This recipe is for those days when your children's friends come over and you have nothing to serve for their snack. It’s very simple and delicious; these lemon cookies will delight them.

  • 50 grams lard
  • 1 teaspoon baking powder
  • 1 tablespoon lime juice
  • 60 grams sugar
  • 1 egg yolk
  • 190 grams flour
  • 1/2 teaspoons salt

  • Preheat the oven to 180 °C.
  • Beat the sugar and butter (softened) until combined.
  • Without stopping beating, add the egg yolk and the juice.
  • Then add the flour with the baking powder (sifted) and the salt. Knead, wrap in plastic wrap, and refrigerate for 15 minutes.
  • Roll out the dough, use flour if necessary, and cut into squares or circles.
  • Bake in a greased tray in a medium oven until cooked but not browned.
