Preheat the oven to 180 °C. Grease the baking sheets with butter, cover with parchment paper or baking paper, and set aside.
Sift the flour together with the baking soda in a medium bowl, then add the ground cinnamon and salt. Mix all the ingredients with a spatula until combined.
Mix the butter, brown sugar, and sugar with a mixer on medium speed until you achieve a smooth and fluffy consistency; this will take about 3 to 6 minutes.
Add the eggs one at a time and the vanilla extract. Make sure to scrape the sides of the bowl with a spatula and mix before each addition.
Gradually incorporate the flour mixture and continue mixing on low speed, ensuring that the ingredients begin to combine. Once you have a homogeneous mixture, fold in the dried cranberries, shredded coconut, nuts, and raisins on low speed. Once the cookie dough is ready, refrigerate for 15 minutes.
Take a portion of the dough the size of a ping-pong ball with clean hands or an ice cream scoop, then flatten the ball with your other hand and shape it into a cookie. Place the oatmeal cookies on a baking sheet lined with wax paper, giving them enough space, as your cookies will spread. Bake at 180 °C for 18 minutes.
