In a saucepan, mix the butter, sugar, honey, and vinegar until it comes to a boil. Stir constantly, remove from heat, and let cool until the mixture is warm. Stir in the beaten egg.
Combine the flour, baking soda, ginger, cinnamon, salt, and stir with the previous mixture until a smooth dough forms.
Divide the dough into three parts. Shape each portion into a disk. Wrap in plastic wrap and refrigerate for at least 2 hours.
On a lightly floured surface, roll out the dough to about 1cm (¼ inch) thick.
Cut the dough with a gingerbread man cookie cutter and place them on a greased baking sheet.
Bake for 7 to 9 minutes or until the edges of the cookies are golden.
