Strawberry Jam-Filled Cookies

You can't miss these cookies; they are super quick and very easy to make. I assure you they will come in handy when you have guests or want to make a special gift.

  • 3/4 cups jam, Clemente Jacques ® strawberry
  • 220 grams icing sugar
  • 250 grams unsalted butter, at room temperature
  • 1 egg, large
  • 650 grams flour
  • 1 teaspoon vanilla essence
  • 1 dash cow's milk

  • Cream the butter together with the sugar.
  • Incorporate the egg and continue beating until fully mixed.
  • Add the vanilla extract.
  • Sift the flour using a strainer or sifter, adding it gradually.
  • Finally, add a splash of milk.
  • You should obtain a heavy dough, shape it into a ball with your hands and cut it into 4 equal parts. Wrap in plastic and refrigerate for a couple of hours.
  • Flour a surface and a rolling pin. Roll out the dough to about 1 cm thick (make some of .5 cm for a thinner version). Refrigerate for another 30 minutes.
  • Using a cutter, make the cookies. You can make circles, hearts, or small flowers in the center of half of the cookies.
  • Place them on a baking sheet lined with parchment paper, bake for 15 minutes at 180°C, and remember to keep an eye on them at all times to prevent burning.
  • When the edges look golden, it’s time to take them out of the oven; let them cool on a wire rack.
  • Place a teaspoon of Clemente Jacques ® strawberry jam in the center of each cookie and top with another cookie, whether you have decided to make shapes or not. Press one against the other as if it were a sandwich.
  • Dust with powdered sugar.
