Preheat the oven to 180º C. Grease and flour the baking sheet.
In a bowl, mix the butter with the sugar until you obtain a creamy pale-colored dough.
In another bowl, mix the eggs with the vanilla and peach essence, then combine this mixture and mix everything very well.
In a separate bowl, mix the pepper, salt, baking powder, and flour, then add this mixture and mix everything very well.
Wrap the dough in plastic wrap and divide it into 2 parts; refrigerate and let it rest for 1 hour.
Then roll it out with a rolling pin on a very clean and cold surface with a little flour until you obtain a sheet 0.5 cm thick, and cut the cookies with different molds.
Place the dough on the pre-prepared baking sheet, leaving a space of 6 mm.
Optional: Add a little cinnamon and bake in the oven for 10 to 20 minutes until golden. Then remove and let cool on a rack until completely cool; they can be decorated or eaten.
For the frosting, put the sugar in a bowl and add very cold water to form a smooth paste, then add a few drops of lemon juice and divide into several containers. Add food coloring and mix very well.
Then use different piping bags to decorate the cookies, and you can also add edible sprinkles or chopped coconut.
