In a bowl, beat the butter with the sugar and lemon zest until pale and fluffy. Gradually and without stopping to beat, add the flour, incorporate the lemon juice, and beat everything until a consistent dough is obtained.
Divide the dough into pieces and form balls of 4 cm in diameter.
Place on baking trays greased with oil, leaving plenty of space between them, and flatten them into circles of 7 cm in diameter. Make stripes on the surface of the cookie with a fork and bake at 180°C for 10-15 minutes, until they are slightly golden. Let them cool on a metal rack.
