Peanut Butter Oatmeal Cookies

These incredible peanut butter oatmeal cookies have the perfect balance of flavor and texture. In addition to being made with such a nutritious ingredient as oats, the Tres Estrellas® pancake flour will give them an extra special touch.

  • 1/4 cups peanut butter
  • 1/2 cups raw sugar
  • 1/2 cups milk, 100 ml
  • 1 1/4 cups oat flake
  • 1 cup Tres Estrellas® pancake flour
  • 1/2 teaspoons baking soda
  • 1 pinch salt
  • 1/2 tablespoons vanilla essence
  • peanuts, toasted, for decoration
  • dark chocolate chips, for decoration

  • Beat the brown sugar and peanut butter with a spatula, then add the milk gradually, the vanilla, and mix and incorporate very well.
  • Add the oat flakes and wait 3 minutes for them to hydrate, then incorporate the Tres Estrellas® pancake flour, baking soda, and salt. Gently fold until everything is perfectly integrated.
  • Cover the mixture with plastic wrap and refrigerate for 15 minutes. Preheat the oven to 180 °C.
  • Divide the cookie mixture into portions of 90 grams each. You can use an ice cream scoop to make it easier and ensure the cookies are the same size and shape.
  • Place the oatmeal cookies on a previously greased and floured tray or lined with parchment paper. Add peanuts to half of the cookies and dark chocolate chips to the other half.
  • Decorate all the cookies with peanuts and bake at 180 °C for 20 minutes or until lightly golden. Let them rest for a few minutes.
  • Serve the peanut butter oatmeal cookies on a rack and accompany with a glass of milk or a cup of coffee.
