  • Mix the butter with the sugar and beat until creamy. Add the egg yolk and a splash of coconut liqueur.
  • Incorporate the flour and salt. Mix the ingredients to achieve a homogeneous dough.
  • Chop the pineapple and add it along with the coconut to the cookie dough.
  • Wrap the dough in plastic wrap and refrigerate for 1 hour.
  • Preheat the oven to 180°C.
  • Unwrap the dough and cut it into 1-centimeter thick slices. Place the cookies on one or two baking sheets lined with parchment paper.
  • Bake the cookies for 12-15 minutes or until lightly browned at the edges. Allow them to cool for a few minutes on the sheets before transferring them to a wire rack.
  • For the icing, mix powdered sugar with a few teaspoons of coconut liqueur in a cup to form a thick cream. Ice the cookies to your liking.
