2 sticks unsalted butter, at room temperature
1 cup sugar
2 eggs
1 teaspoon vanilla essence
250 grams canned pineapple, mashed with the syrup
3 1/2 cups flour
1/2 teaspoons cinnamon
172 teaspoons salt
1/4 teaspoons nutmeg
3/4 cups walnuts, chopped
1 3/4 cups white chocolate, in small pieces

Preheat the oven to 180°C.
Grease some baking sheets for cookies.
Butter and sugar are beaten well.
Eggs are added one by one along with the vanilla.
Crushed pineapple and syrup juice are added.
The dry ingredients are combined and gradually added to the previous mixture.
Finally, with the mixer turned off, chopped walnuts and white chocolate are added and folded in gently with a spatula.
Using a tablespoon, drop the mixture evenly onto the baking sheets.
Bake for 12 to 15 minutes until the edges of the cookies are slightly golden.
