  • 2 sticks unsalted butter, at room temperature
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla essence
  • 250 grams canned pineapple, mashed with the syrup
  • 3 1/2 cups flour
  • 1/2 teaspoons cinnamon
  • 172 teaspoons salt
  • 1/4 teaspoons nutmeg
  • 3/4 cups walnuts, chopped
  • 1 3/4 cups white chocolate, in small pieces

  • Preheat the oven to 180°C.
  • Grease some baking sheets for cookies.
  • Butter and sugar are beaten well.
  • Eggs are added one by one along with the vanilla.
  • Crushed pineapple and syrup juice are added.
  • The dry ingredients are combined and gradually added to the previous mixture.
  • Finally, with the mixer turned off, chopped walnuts and white chocolate are added and folded in gently with a spatula.
  • Using a tablespoon, drop the mixture evenly onto the baking sheets.
  • Bake for 12 to 15 minutes until the edges of the cookies are slightly golden.
