Red Velvet Cheesecake Cookies

An excellent combination between the sweetness of the cookie and the tartness of the cheesecake!! A great dessert for Christmas due to its colors and flavors. You can gift them and make a great impression.

  • 1 stick unsalted butter
  • 1/2 cups sugar
  • 1/2 cups brown sugar
  • 1 egg
  • 1 teaspoon liquid vanilla
  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/4 teaspoons salt
  • 1/3 cups cocoa
  • 1 tablespoon red food coloring
  • 1 stick cream cheese
  • 1 cup powdered sugar
  • 1 teaspoon liquid vanilla

  • Preheat the oven to 180ºC.
  • For the cookies, cream the butter with both types of sugar until the mixture looks fluffy.
  • Add the egg and vanilla and continue beating. Once well mixed, add the food coloring and let the entire mixture turn red.
  • In another bowl, mix the flour with the baking powder, cocoa, and salt. Once combined, gradually add them to the butter mixture.
  • For the filling, using a mixer, blend the cream cheese with the sugar and vanilla until smooth.
  • To assemble the cookies, add 2 tablespoons of the cookie mixture and flatten it in the palm of your hand.
  • Add a teaspoon of filling in the center and cover it with the cookie mixture, forming a ball.
  • Place the ball on a baking sheet. Continue until you finish the mixtures.
  • Bake the cookies for 11 to 13 minutes or until they start to crack on top. Let them cool.
