Cream the butter with the egg yolk in a bowl (using a mixer or manually); when it takes on a yellowish color, add the sugar and vanilla while continuing to beat. In a separate bowl, sift the flour and salt, and gradually add them to the mixture until a manageable ball forms.
Place the egg white in a bowl and beat lightly. In another bowl, place the finely chopped walnuts. Preheat the oven while we prepare the cookies.
Make small balls about 1.5 cm in size and dip them in the beaten egg white, then roll them in the walnuts to cover the entire surface, and place them on a previously greased baking tray. Use your index finger to make a depression (hole) in each one.
We bake them in the oven at 180 °C for 12-15 minutes. Let them cool, and if we are not going to eat them, we store them. If we are going to use them, we fill the holes with jam of different flavors to make them look attractive; they are truly delicious.
