White Chocolate and Walnut Cookies

This is a recipe I took from one of my cookie books that I want to share with you; it is simple, level 1, and I assure you that you won't regret giving it a try.

  • 1/2 cups wheat flour, (200 grams)
  • 1/2 teaspoons baking soda
  • 1/8 teaspoons salt
  • 1/2 cups butter, softened (125 grams)
  • 1/2 cups sugar, unrefined (demerara or Barbados) (150 grams)
  • 1 teaspoon vanilla essence, or extract
  • 1 egg, large
  • 125 grams white chocolate, coarsely chopped (4 oz)
  • 1/2 cups walnuts, finely chopped (50 grams)

  • Preheat the oven to 180°C (350°F).
  • Grease a baking sheet with butter.
  • In a medium bowl, mix the flour, baking soda, and salt.
  • In a large bowl, using an electric mixer on high speed, beat the butter with the sugar until creamy.
  • Add the vanilla and the egg, beating just until combined.
  • Incorporate the dry ingredients, white chocolate, and walnuts.
  • Make balls the size of a walnut with the dough and place them on the prepared baking sheet, leaving a 5 cm (2 in) space between them.
  • Bake for 10 to 12 minutes, until golden.
  • Let cool on the baking sheet until the cookies are slightly firm, then transfer to wire racks and let cool completely.
