In a skillet, the piloncillo is heated with the two cups of water until the piloncillo dissolves. It is left to cool.
Then the flours, baking powder, anise, and baking soda are added and mixed to form a well.
Once the piloncillo syrup is cool, we pour it into the well and knead; then we add the lard and continue kneading until we have a smooth dough.
We roll out the dough to a thickness of 1 centimeter and proceed to cut out the little pigs or shapes.
They are placed on a previously greased baking sheet and brushed with beaten egg to give them shine; they are baked at 200 degrees for about 15 to 20 minutes or until they are golden brown.
