Mix the flour with the baking powder. I recommend sifting it to avoid lumps. Add the vanilla and the egg.
Add half of the flour and beat until all ingredients are combined. Incorporate the rest of the milk and beat until you have a liquid, lump-free batter.
Place the oil in a pot and heat it to 180°C. Add the lemon zest, remembering to remove the lemon zest before you start frying the buñuelos.
Using a spoon, drop a small ball of the dough into the oil. Fry it for about 3 minutes until golden brown on all sides. Repeat this process with the remaining dough.
Place the buñuelos on paper towels to absorb the excess fat.
Cover the buñuelos de viento with sugar and cinnamon.
