Churro Volcano

To make churros, you only need a bit of flour, egg, and baking powder, but if you want to give it a special twist, you have to follow this pastry recipe. This delicious dessert, in the style of a lava cake or volcano, is made from fried churro batter, filled with soft dark chocolate ganache. Dare to try a new way of eating churros with chocolate.

  • 3 cups bittersweet chocolate, for the filling
  • 1/3 cups butter, for the filling
  • 1/4 cups whipping cream, for the filling
  • 1 2/3 cups water, for the churro mixture
  • 1 pinch salt, for the churro mixture
  • 1 tablespoon yeast, (15 g) for the churro mixture
  • 2 1/4 cups flour, for the churro mixture
  • 3 eggs, for the churro mixture
  • vegetable oil
  • sugar, for sprinkling
  • cinnamon, for sprinkling
  • vanilla ice cream
  • cajeta

  • For the filling, melt the chocolate, butter, and heavy cream in the microwave until you get a thick mixture. Freeze until you can form small balls and set aside.
  • In a small pot, place the water and heat until it boils, dissolve the salt, add the flour with the baking powder all at once, and mix until you obtain a thick dough. Set aside.
  • Pour the eggs one by one into the previous mixture until it becomes smoother. Place in a piping bag and set aside.
  • In a cupcake mold, pour the mixture using the piping bag. Fill with the ganache and freeze. Unmold and set aside.
  • Heat the oil over medium heat and fry the preparation until cooked, then remove.
  • Cover the preparation with sugar and cinnamon, cut, and enjoy with vanilla ice cream.
