Boil the water with the remaining sugar and butter in a pot over medium heat.
Add the flour and stir for 1 minute over low heat.
Remove from heat and add the eggs, vanilla, and stir well.
Place the mixture in a piping bag.
Heat the oil in a pot, and once hot, use the piping bag to make the churros, letting them fall directly into the oil.
Cook them for about 3 minutes or until they are slightly golden.
Remove the churros from the oil and place them on a plate with a napkin to absorb the excess oil.
Then add the churros to the sugar and cinnamon mixture, turning them until well coated.
Melt the chocolate chips in a double boiler or simply in the microwave, put it in for one minute, take out the chocolate, stir it, and put it back in the microwave for another minute, and so on until you achieve the desired consistency.
Serve the churros accompanied by the melted chocolate.
