Place the corn kernels in the blender, add vanilla extract, sugar, cream cheese, and the egg. Blend until the ingredients are well combined.
Melt the butter in the microwave and add it to the blender, then add the flour and baking powder. Blend again to incorporate all the ingredients.
Transfer the mixture to a bowl and add the amaranth. Grease a loaf pan and pour in the mixture, spreading it evenly throughout the pan.
Bake at 180°C for 40 minutes. Remove from the oven and let it cool completely before unmolding.
Dust a little powdered sugar on top and serve.
