Corn Bread with Amaranth

  • 45 grams butter
  • 50 grams flour
  • 1/2 teaspoons baking powder
  • 65 grams sugar
  • 2 corn kernels
  • 30 grams amaranth
  • 50 grams cream cheese
  • 1 teaspoon vanilla essence

  • Place the corn kernels in the blender, add vanilla extract, sugar, cream cheese, and the egg. Blend until the ingredients are well combined.
  • Melt the butter in the microwave and add it to the blender, then add the flour and baking powder. Blend again to incorporate all the ingredients.
  • Transfer the mixture to a bowl and add the amaranth. Grease a loaf pan and pour in the mixture, spreading it evenly throughout the pan.
  • Bake at 180°C for 40 minutes. Remove from the oven and let it cool completely before unmolding.
  • Dust a little powdered sugar on top and serve.
