Cream-filled Profiteroles Covered in Chocolate

  • 1 cup water, for the profiteroles
  • 1 1/2 cups Tres Estrellas® churros mix, for the profiteroles
  • 2 eggs, for the profiteroles
  • 1/2 cups clotted cream, for the filling
  • 1/4 cups icing sugar, for the filling
  • 1/2 cups butter, for the filling
  • 1/2 cups whipping cream, for the filling
  • 1 cup bittersweet chocolate, melted
  • strawberries, for decorating

  • Preheat the oven to 210 °C.
  • Boil the water and when it starts to bubble, add the Tres Estrellas® churro flour, mix with a wooden spatula in a folding motion for 20 seconds, until the flour absorbs the water and pulls away from the pot.
  • Place the dough in a bowl, add the eggs, and beat until incorporated using a hand mixer. Set aside.
  • Place the dough in a piping bag with a star tip and shape the profiteroles on a baking tray lined with parchment paper, ensuring they are all the same size. Bake for 20 to 25 minutes. Let cool and set aside.
  • Cut the profiteroles in half and set aside.
  • Whip the cream with the powdered sugar until combined, add the butter and heavy cream, and stir until it changes slightly in color.
  • Fill the profiteroles with the cream, cover, and decorate with thin lines of chocolate and strawberries.
