Easy Buñuelos with Dulce de Leche

Buñuelos are a typical and seasonal Mexican dessert that comes with a homemade syrup made with piloncillo. With this easy buñuelos recipe, you can prepare a tower filled with cream cheese and dulce de leche and your own piloncillo syrup from scratch. To prevent the flour tortillas from burning, it's important that the oil is not too hot, and if you want the syrup to have a thicker consistency, add only half the water.

  • 10 flour tortillas
  • 1 piloncillo, for the syrup
  • 1/4 cups water, for the syrup
  • 1 cinnamon stick, for the syrup
  • 2 star anise pods, for the syrup
  • 3 guavas, slices for the syrup
  • 1 cup cream cheese, for the filling
  • 1 cup dulce de leche, for the filling

  • In a skillet over low heat, fry the flour tortillas until they are crispy. Place on paper towels to absorb excess grease and set aside.
  • For the syrup: heat in a small pot over medium heat the piloncillo, water, cinnamon, star anise, and guavas. Cook until it forms a syrup. Let it cool and set aside.
  • For the filling: beat the cream cheese until smooth, add the dulce de leche, and mix until well combined.
  • On a board, assemble the tower of buñuelos, adding the filling in each layer and topping with whipped cream. Decorate with guavas and cinnamon, and serve with the syrup for buñuelos.
