Floating Islands with Coffee Cream

  • 150 milliliters San Juan® egg whites
  • 125 grams sugar
  • 800 milliliters cow's milk
  • 1 pinch salt
  • 5 milliliters vanilla essence
  • 10 grams instant coffee
  • 15 coffee grains
  • 350 milliliters whipping cream

  • Dissolve the vanilla and coffee in 50 milliliters of milk.
  • Whip the cream with 100 grams of sugar. Heat in a saucepan over low heat.
  • Incorporate the coffee mixture into the milk.
  • Whip the egg whites until stiff peaks form. Add a pinch of salt. Gradually add 25 grams of sugar.
  • Form islands with the egg whites, using a spoon to drop a bit of the whipped egg whites into the milk. Carefully cook them in the milk for 1 minute and then remove them.
  • Serve the islands over the cold coffee cream. Add coffee beans.
