Ingredients

4 servings
  • 150 milliliters of San Juan® egg whites
  • 125 grams of sugar
  • 800 milliliters of milk
  • 1 pinch of Salt
  • 5 milliliters of vanilla
  • 10 grams of instant coffee
  • 15 pieces of Coffee grains
  • 350 milliliters of whipping cream

    Preparation

    Dissolve the vanilla and coffee in 50 milliliters of milk.
    Beat the c row with 100 grams of sugar. Heat in a pot over low heat.
    Incorporate the coffee mixture into the milk.
    Mount the egg whites until stiff. Add a pinch of salt. Gradually add 25 grams of sugar.
    Form islands with the whites, with a spoon pour a little of the whites mounted on the milk. Carefully cook them in the milk for 1 minute and remove them.
    Serve the islands over the cold coffee cream. Add coffee beans.

    PRESENTATION

    Serve with a few grains of coffee.

    TIPS

    Chill in the freezer the bowl that you will use to beat the whites, the colder it is, the faster the whites acquire the snow point.
