1 cup quinoa, washed
2 cups water
1 pinch salt
4 Oikos® plain Greek yogurt, 150 ml each
4 teaspoons pistachios, chopped, for decoration
4 leaves peppermint, for decoration

In a small pot over low heat, cook the quinoa with the water and a pinch of salt for 20 minutes covered. Let it cool.
Divide the quinoa into 4 small cups and fill with the kiwi yoghurt.
Decorate with chopped pistachios and a few mint leaves.
