Kiwi Yoghurt with Quinoa and Pistachios

  • 1 cup quinoa, washed
  • 2 cups water
  • 1 pinch salt
  • 4 Oikos® plain Greek yogurt, 150 ml each
  • 4 teaspoons pistachios, chopped, for decoration
  • 4 leaves peppermint, for decoration

  • In a small pot over low heat, cook the quinoa with the water and a pinch of salt for 20 minutes covered. Let it cool.
  • Divide the quinoa into 4 small cups and fill with the kiwi yoghurt.
  • Decorate with chopped pistachios and a few mint leaves.
