Lemon Meringue Pie

  • 1 1/2 cups cookies, crushed
  • 1/4 cups butter
  • 1 can condensed milk
  • 4 eggs, separate the egg yolks from the egg whites
  • 4 tablespoons lime juice
  • 200 grams sugar

  • For the crust; mix the cookie crumbs and melted butter; press it into a pie pan and spread it evenly across the bottom with the back of a spoon.
  • Blend the condensed milk, egg yolks, and lemon juice until well combined. Pour the filling over the crust in the pie pan.
  • Beat the egg whites until stiff peaks form, then add the 200 g of sugar and the lemon juice, until the meringue has a smooth yet firm consistency.
  • Spread it over the pie, forming peaks with a spatula.
  • Bake at 180°C for 15 minutes.
