Marshmallow Pops

  • 2 cups water, boiling
  • 1 package gelatin, of your choice flavor
  • 1 cup whipping cream
  • 2 cups apple juice
  • 1 1/2 cups marshmallows

  • Melt 1 cup of marshmallows in the microwave in 15-second intervals to avoid burning, and mix with the whipping cream.
  • Add boiling water to the gelatin in a medium bowl and stir for 2 minutes until completely dissolved. Gradually, in a large bowl, add the gelatin to the marshmallow cream using an electric mixer on medium speed until well combined. Add the juice and stir.
  • Place the remaining marshmallows into plastic cups.
  • Pour the mixture evenly into the cups, pressing down slightly on the marshmallows.
  • Refrigerate the cups, and when it starts to set, insert the wooden sticks. Refrigerate until completely set.
