  • Place water in a pot and add vanilla, salt, sugar, and a splash of oil.
  • Sift the flour and add it to the boiling water. Stir quickly with a wooden spoon until you have a compact dough. Lower the heat and cook the dough for about 3 minutes.
  • Transfer the mixture to a mixer and set it to high speed to cool down. If you have any lumps of flour, don’t worry, they will break down with the mixer’s movement. Add brown food coloring.
  • Add the egg and baking powder. Beat until the dough is smooth. You will have a slightly runny but still compact dough.
  • Heat the oil to 180° C. Transfer the mixture to a piping bag fitted with a large star tip and squeeze a bit of the mixture into the hot oil. Cut with scissors and carefully drop into the oil.
  • Cook each churro for about 3 minutes. Remove them from the oil and place them on a paper towel to absorb excess grease.
  • Finally, coat the churros with sugar and cinnamon.
