  • 6 egg whites, for the sponge cake
  • 1/4 cups sugar, for the sponge cake
  • 6 egg yolks, for the sponge cake
  • 1/4 cups sugar, for the sponge cake
  • 1 cup flour, for the sponge cake
  • 3 tablespoons butter, melted, for the sponge cake
  • 1 teaspoon vanilla essence, for the sponge cake
  • 2 cups whipped cream, for the filling
  • 1 cup strawberry jam, for the filling
  • bittersweet chocolate, melted, for decoration
  • chocolate sprinkles, for decoration

  • Beat the egg whites with the sugar until they double in volume. Set aside.
  • Beat the egg yolks with the sugar until they double in volume. Set aside.
  • Gently fold the egg whites into the yolks. Then add the flour gradually, using a sifter. Finally, add the vanilla extract and the butter, and continue mixing until incorporated.
  • Pour the mixture into a tray lined with parchment paper and bake the sponge cake at 180 °C for 11 minutes.
  • Sprinkle a little powdered sugar over a dry cloth, flip the sponge cake when it comes out of the oven, and carefully remove the parchment paper. Roll it up and let it cool for 40 minutes.
  • Fill the niño envuelto with whipped cream and strawberry jam, and roll it up. Cover with dark chocolate and chocolate sprinkles.
  • Serve the sweet niño envuelto in slices and accompany it with a glass of cold milk.
