Yuca Cake

  • 1 kilo cassava
  • 2 cans condensed milk
  • 5 eggs
  • 100 grams guayanes cheese, to taste
  • 10 grams raisins, or candied fruit
  • 30 milliliters caramel, sugar
  • 3 leaves peppermint, for decoration

  • Preheat the oven to 180°C.
  • Peel the yuca, wash it, and cut it into small pieces. Sauté it in a pan. Then remove from the heat and mash it to make a puree, being careful to remove all the root sticks it contains.
  • Incorporate the yuca puree with the eggs, condensed milk, cheese, and raisins or candied fruit. Mix thoroughly and bake for approximately 45 minutes.
  • Remove and unmold, add the sugar caramel and voila! Enjoy something delicious with the little ones at home.
