Easy Lime Sigh

  • 1 1/2 cups evaporated milk
  • 3/4 cups condensed milk
  • 1 teaspoon vanilla essence
  • 5 egg yolks
  • 2 cups sugar, for the meringue
  • 1 cup port wine, for the meringue
  • 5 egg whites, for the meringue
  • cinnamon, for decoration

  • In a small pot over medium heat, add the evaporated milk, condensed milk, and vanilla essence, cook for 5 minutes until heated, add the egg yolks one by one, cooking while stirring with a whisk until it reaches a thick consistency. Let cool and set aside for 10 minutes.
  • For the meringue, in a small pot over medium heat, add the sugar with the port and cook for 8 minutes or until the bubbles appear thick, taking time to break, at 115°C.
  • Beat the egg whites to a soft peak, gradually add the syrup in a thin stream and continue beating until you have a firm and shiny meringue. Place the meringue in a piping bag with a plain tip. Set aside.
  • Serve the lime sigh in an individual cup, decorate with meringue and cinnamon.
